Cacao originated in the Amazon Basin, and was already consumed thousands of years ago in pre-hispanic times in form of a drink. The ancient people of Central America and today’s Mexico created a potent ceremonial mixture by combining cacao beans with other ingredients such as maize and chili.

The process of producing today’s cacao involves a few simple steps, but great care must be taken at each stage to fully develop the cacao’s subtle notes and flavors.
